The Fat Panda Story

Fat Panda Snack Shack starts as a weekly super sexy secret subscription only bakery cafe. $10 a month or $100 for the year nets you your weekend bread and French sticks, some pastries, some cakes and some full breakfasts and the like. Bread delivered or you can pick it up and and or eat in every Saturday from 10:30. Menu and Product updated weekly. Each week will be a bit different, or completely different. But all ideas and preferences welcome. Love your food, Love your life! Larger orders and special items may be arranged with sufficient notice. A Happy Panda is a well fed Panda!






Now we see a way forward. The future has come into focus. Mobile 24 hour food. Especially street style foods from around the globe. Fried. Baked. Boiled. Steamed. you name it and we will work out how to do it and get it to you. All for a reasonable price. 
We need a glorious food truck, capable of amazing feats of valour and endurance. The van will be painted to represent ancient pandas baking treats and eating sweets. 
I'm a baker and teacher. We have a good team of pastry chefs, a butcher a few engineers and we are ready to get food into people hands and faces where and when they need it. It's unfair to think that out there somewhere, there's a kid who had a normal birthday party, one with just a Mom cake... Then there's that same kid the year after who tweeted the Fat Panda Snack Shack and got a super awesome fully catered birthday ever and was the happiest kid in the world. 






Our product is always made fresh and baked, fried, finished and served on sight. Locally sourced where possible, and organic when available. We want the best product around and we want to treat our It all comes from a passion. An un-ignorable obsession for baked goods. Specifically, bread and doughnuts. These two items are found to have endless variations , iterations, traditions, conventions, complications and conditions. The world abounds in these products and mostly they are problematic, even disasterous to our health, bodies and future sustainability. 

Good bread and good doughnuts aren't always available everywhere at a reasonable price. If ever reasonably priced?! But why? Production costs? Ingredients? Efficiency? 
Mistaking expensive products for good products is common today. Quality product information is mostly spin or takes amazing liberties, especially in advertising. 

Do only some people, in certain places deserve good product? Do the French own these  things ?  USA? Vietnam?  Nigeria? Germany? China? Italy?  These peoples live the world around, so to does their food appear. But does this authentic lineage of imported traditions make the product good? Mostly technique, style and flavour make the products good. Ingredients make the  better.

Better ingredients of the best quality, that  is.  Not, more ingredients added to boost efiicienfy, productivity, keeping qualities and the whole host of other chemicals, numbers and such. We find lavish lists of ingredients upon common products, sold for vast products, to the consumers detriment.

Less is more, smaller batches allow better control and flavour possibilties, fermentation options and variations ingredient variations. No additives! Nothing you  can't source personally, locally and affordably. Everything made by hand. All products cut and shaped carefully, rested  and proofed to perfection. All orders given the utmost attention throughout every stage. Relaxed time management and incredible flexibilty allow for our products o be given the ultimate personal attention. 

My scope is never to outgrow my ability to produce. Everyone needs to discover more time to enjoy these products. Every customer is essential, their input pivotal. All ideas are welcome. The bakery is alive and so grows, changes, developes organically. I don't need a lot of money to buy flour and salt. And when your  work is your passion, you have a strong flexible family in behind you, there will be plenty of time to enioy life. Balance helps, too. We have so much fun, but there are dark and cold days to get through  and hard work still to be done. Always worth it in the end, smiles and happy people will do it for you every day.
